Roger Hocking
Since gaining his
Graduate Diploma in Viticulture at Charles Sturt
University in 1992, Roger has constructed several
boutique Victorian vineyards, both in Bendigo and
Healesville and has been involved with a contractor
developing and maintaining large vineyards in the
Yarra Valley. He now manages two premium quality
vineyards in the Yarra Valley and is totally
committed to producing cool climate wines of
distinction.

Paul Evans
Paul Evans is our dedicated
winemaker. He owns and operates his own contract
winemaking business, Quercus Oenology, based at
Tokar Estate here in the Yarra Valley. Specialising
in small quantities of wine for boutique wineries,
Paul has established a first class operation
utilising the best equipment available. He keeps his
winery and machinery meticulously clean and his
record keeping is very thorough.
Paul has studied winemaking and gained experience in
Germany for five years before
returning to Australia in 1995, where he broadened
his experience with wine styles when he took a
position with Domain Chandon. Here he concentrated
predominantly on sparkling wine varieties. Paul then
accepted an offer from Oakridge Estate to become
Assistant Winemaker and later was appointed Winery
Manager with the responsibility of overseeing the
entire wine production for the company.
In 2002 Paul embarked on his own enterprise in close
association with Leon Tokar at Tokar Estate. Here he
aims to product the finest examples of cool climate
boutique wine styles from one of the most
distinguished grape growing regions in Australia.
